Favorite Waffles

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

  1. Preheat waffle iron.
  2. Put eggs in standing mixer, turn on medium speed and begin gathering other ingredients.
  3. Add milk, oil, flour, sugar, baking powder, salt and vanilla and mix just until smooth. (Don’t over mix.)
  4. Spray preheated waffle iron with non-stick cooking spray. Pour onto hot waffle iron. Waffles are done when they stop steaming, typically after about 3 1/2 minutes.

YIELDS: 6 servings
For the favorite waffle topping, put a tablespoon of butter in a cup, pour some real maple syrup over itand microwave 30 seconds or until butter is mostly melted.  Pour over waffles.
For a 4 square waffle iron pour 1 full cup of mix.
The higher oil content in these means they require very little butter.
Batter can be refrigerated for up to a week. Whisk well before using.  (Waffles will not be as fluffy.)
